SEMI-AGED PECORINO
The semi-aged Pecorino Pienza "Marzolino Rosso"is produced with pasteurized sheep's milk, it ages for about 60 days after its processing. This type of pecorino is treated on the surface with tomato paste and olive oil, which gives it an unmistakable and characteristic red color. It’s soft texture, compact, and white. It has a delicate flavor which is not overbearing.
Its semi-aged characteristic also makes it ideal for making pecorino crostoni.

Storage

Around 180 days if kept in a cool place with a temperature of +8°/+10°.
We recommend wrapping the cheese in plastic where it has been sliced and then wrap with cotton cloth.
Recommended pairings:
With this pecorino we enjoy various jams but the most highly recommended are those of figs and almonds, pears, red onions. Delicious with a classic balsamic vinegar cream or even varieties with Truffle or Raspberry. The best wines to pair are medium-structured red wines such as the Orcia DOCG or the Rosso di Montepulciano.
